Fumaric acid, E297, CAS No.: 110-17-8, also known as trans-2-Butenedioic acid and known by the chemical formula C4H4O4, is a carboxylic acid derived from butene and is a colorless, flammable crystal. Fumaric acid is mainly used in meat processing in the food industry as acidity regulator, acidifier and antioxidant. Fumaric acid can keep the aqueous solution at PH3.0 or so, which plays an important role in bacteriostatic and mildew control. At the same time, it is one of the strongest solid acids with sour taste and low absorptance, which helps to prolong the storage life of powder products.
