Magnesium Chloride Anhydrous is an inorganic salt that usually exists in the form of white crystalline powder and has a wide range of applications. In the food industry, anhydrous magnesium chloride is a protein coagulant. Tofu made with brine (food-grade magnesium chloride aqueous solution) is tenderer and more flavorful than tofu made with gypsum. It is also used as an additive in some foods. In agriculture, anhydrous magnesium chloride can be used as magnesium fertilizer, potash-magnesium fertilizer and cotton defoliant.
