Sodium metabisulfite (Na2S2O5) is an inorganic compound, which is white or yellow crystal with a strong pungent smell. It is soluble in water and the aqueous solution is acidic. When it comes in contact with strong acid, it releases sulfur dioxide and generates corresponding salts. The main function of sodium metabisulfite is as an oxidizing agent. Mainly used as preservatives, bleaching agents and loosening agents in food processing. Sodium metabisulfite is commonly used as a preservative in the brewing industry.
