Sodium Acid Pyrophosphate (SAPP) is an inorganic substance, Alias: Disodium dihydrogen pyrophosphate, Molecular formula: Na₂H₂P₂O₇, white crystalline powder, relative density 1.862, easily soluble in water, used for functional moisturizing agent, PH adjuster, metal chelate mixture.


SAPP is used as baking powder, used for baking food, controlling fermentation speed, and improving production intensity; used for instant noodles, reducing the rehydration time of the finished product, and is not sticky or rotten. Used for biscuits and cakes, shorten fermentation time, reduce product damage rate, neat loose spaces, and extend storage period.
